Roasted sausage and veggies is probably my favorite weeknight meal to make. It uses up all the veggies we get from our CSA and is easily adaptable to whatever ingredients we have on hand. All you need is smoked sausage and a ton of veg. You can use carrots, potatoes, sweet potatoes, squash, broccoli, zucchini, onions, peppers, green beans, brussels sprouts, – literally any vegetable that is tasty when roasted (which is pretty much any vegetable, tbh).
Chop up the sausage and all your veggies into bite-size pieces. I usually use enough to fill two baking sheets. Some vegetables (squash, potatoes, etc.) take longer to roast than others, so I recommend placing vegetables on one baking sheet and keep the veggies that don’t take quite as long in the oven (peppers, green beans, brussels sprouts, etc.) as well as the sausage on the second baking sheet. Drizzle everything in olive oil and season as desired. I always use Cajun seasoning, salt, pepper, and garlic powder. Toss to evenly coat and roast in the oven at 400. I generally roast potatoes, sweet potatoes, squash, etc. for about 30 minutes total. The sausage and quicker-cooking veggies usually take about 15 minutes.
You can enjoy this dish by itself, or you can serve with rice or quinoa. So tasty!
