I Fucking Love Meal Planning

I am not sorry for cussing in the title of this post. I emphatically *do* love meal planning. I like everything about it. Generally, I plan from Thursday-Thursday since Wednesdays are for leftovers/salads, and we also receive our weekly CSA box on Wednesday afternoons. Here’s what we’re eating this week:

Thursday- Instant Pot Korean beef with rice and steamed veggies (using, of course, a recipe from the magnificent Damn Delicious)
Friday- BBQ Pork Sandwiches with leftover slow cooker pulled pork and homemade kale chips
Saturday- Roasted sausage and vegetables with leftover homemade noodles (using this recipe)
Sunday- Veggie pasta salad (my partner makes the best pasta salad)
Monday- Caldo verde soup (new recipe from our CSA)
Tuesday- Chicken tetrazzini with leftover shredded chicken and whatever CSA vegetables remain
Wednesday- Leftovers/Salad night
Thursday- Pot roast with carrots, onions, and potatoes
